Crock Pot Recipe: Sweet Potato and Chickpea Soup (Vegan and Gluten-Free)

When I saw a recipe online for a crock pot meal with garbanzo beans (or chickpeas) and sweet potatoes, I immediately ran to the kitchen to see if I had all the ingredients I needed to get started on it.  I had all but fresh spinach (no biggie), so I took out the crock pot, placed all ingredients on the kitchen countertop, and in less than 10 minutes I had everything (except the spinach) warming up in the crockpot. This is a conveniently easy quick-fix meal for busy days when you really donโ€™t have much time to cook, since thereโ€™s very little prepping time required.  Just peel and cut the potatoes into cubes, toss all other ingredients into the crock pot and walk away from it for a few hours. Perfect for any Monday,  since we all know no one likes to cook on the busiest (and laziest) day of the work week. 

Sweet Potato and Chickpea Soup

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 1/2 cups garbanzo beans, uncooked
  • 4 cups vegetable broth
  • 6 cups water
  • 2 tsp. salt
  • 2 tsp. ginger
  • 1/2 tsp. cinnamon
  • 1/2 tsp. black pepper
  • 2 1/2 tsp. corn starch
  • 2 cups fresh spinach

Directions

  1. Toss all ingredients into crock-pot.
  2. Cook for 4 hours on high heat setting or 8 hours on low-medium setting
Prep Time: 10 minutes
Cook Time: 4 Hours
Total Time: 4 Hours 10 minutes
Yield: 8 - 10 servings๏ปฟ
