Pico de Gallo Recipe

Pico de Gallo is a quick and easy tomato-based Mexican salsa with a mild flavor that adds freshness to practically every Mexican dish you can think of.  Serve it over an omelet, tacos, burritos, nachos, or simply scoop it up from a bowl with a tortilla chip.  It only takes 5 minutes to prepare, doesn’t require a stove (perfect for hot summer days) and very few ingredients are needed.

Pico de Gallo Recipe

Prep Time: 5 minutes
Makes 2 cups

Ingredients

 1 large ripe tomato (1 cup), chopped
½ cup yellow onion, chopped
½ cup cilantro (1/2 cup), minced
1 large jalapeno pepper, chopped
1 Tbs. lemon juice
1 1/2 tsp. salt
1 tsp. black pepper

*adjust quantity of lemon juice and salt for desired taste. 
*always taste test with tortilla chip

Directions

  1. Chop all ingredients and toss into a bowl.
  2. Blend with a fork.
